Clay is an important crafting material in Windrose. You'll need it for clay pots and clay bottles, as well as more advanced construction recipes. The game prompts you to look for clay once you gain access to the alchemy table and asks you to craft some healing potions (believe me, potions are a necessity as you tackle the game's harder islands), although you may have already found some while exploring the starting coastal jungle islands.
